Ingredients:
3 tblsp Oil (preferably Ghee)
2 Bay Leaves
1/2 tsp of mustard seeds(rai)
1/2 tsp of cumin seeds
2 medium red onions sliced lengthwise
Juice of 1/2 lime
1 tbsp salt(according to taste)
3/4 tsp of Garam Masala
Garnish of some fried golden brown red onions
1 tsp of red chili flakes
3 cups of basmati rice
6 cups of water
1 tbsp of butter

1 tbsp of butter
Preparation:
- Heat oil or ghee in a pan.
- Pop cumin seeds and mustard seeds in that until it gets a little
toasty.
- Add the bay leaves. Now add the red onions and saute those for a
2 minutes until it becomes transluscent or even upto browned stage(optional).
- Add salt, garam masala, red chili flakes and lime juice. Let cook
for another minute.
- Now add the prewashed rice and toast it a little bit for couple
seconds and add the water.
- Now add 1 tbsp of butter. Bring it to a high boil and then simmer
the gas and cover the pan with a lid and let cook for 5-7 minutes.
- Once rice is cooked and water is all soaked in let it sit for couple
minutes for it to continue cooking in its steam for a bit.
- That strengthens the flavor. Just garnish it with fried red onions
before serving it on a platter.
- Its optional to fish out the bay leaves or leave it there for presentation.
